In vitro examination of the antimicrobial activity of a potentially probiotic Lactobacillus acidophilus strain against Escherichia coli, Staphylococcus aureus and Salmonella sp.

An interesting property for many probiotic strains is to exhibit antimicrobial activity against pathogenic microorganisms. Therefore, the of potentially strain Lactobacillus acidophilus L12 Escherichia coli, Staphylococcus aureus and Salmonella sp. was examined in vitro through co-culturing with each 72 h. When cultured individually, all reached a final population always exceeding 10 12 cfu/mL. co-cultured exceeded cfu/mL, while bacterial reduced strain-specific manner. demonstrated highest inhibitory two strains, followed by E. coli tested. The kinetics process test modelled using logistic curve model. obtained results show strong antagonistic L12, thus making it promising candidate inclusion composition preparations functional foods.
